Wink1 Hey Joe, your last recipe reminded my wife of this oldie...........
Frozen Cucumbers
2 quarts sliced cucumbers
2 sliced onions (red looks good)
1tbs. salt
1 cup cider vinegar
1 + 1/4 cups sugar
Method
1. Slice cucumbers, do not peel.
2. Mix sliced cucumbers, sliced onions and salt.
let stand 2 to 3 hours.
3. Mix vinegar and sugar, stir until sugar is dissolved.
4. Pour over cucumbers and freeze.
Nice and crisp!
Eat as soon as you want... save some for Thanksgiving too.
Note: Don't use a late in the season bitter cucumber.
The pickles will be bitter.
