Anyone have a special fish recipe that they would like to share. My favoirte is probably trout fried in butter in a saucepan. MMMMmmmmm excellent eating.

try crushing up some ritz crackers over that trout and then fry it up.

I like to use Ritz too, but I put them in a zip lock bag, with some garlic, and onion powder, salt, lemon pepper, and a little parsley flakes. Crush em up good, and shake to mix.
Then I put the crumb mix in a bowl, to dip the fillets in.
I rinse the fillets, then pat dry with paper towel, then dip top & sides only in the mix.
Place the fillets in a greased ( pam, margerine etc.) baking dish. After all the fillets are coated and in the pan, I take the remaining crumbs and sprinkle on top of the fillets so I get a good even coating, then to the oven.
Depending on the thickness I cook at about 350 for 20/25 min.

The reason I don't coat the whole fillet, is so the coating doesn't get soggy on the bottom while cooking.

sorry I don't give quantaties but I tend to cook by throwing things in till I am satisfied, measuring utensils don't get a big workout at my house, unless I am trying a new recipe.
