View Full Version : I would realy like a few bluefish recipes

can someone help me? A good friend of my husbands just gave us a couple of nice big bluefish. I very often do them on the grill but thought I would ask for the very capable help of the membership. So trot out your favorite bluefish recipes so I can take a look at them. Thank you in advance for all your help I do appreciate it.

Not so much of a recipe, but i like to soak the blue fish overnight in milk. it helps take away some of the oily, fishy taste often associated with them. My friends brother in law is the head chef at yale and taught us to do this.

2-3 garlic cloves, minced
1/2 tsp. paprika
1 tsp. basil
1 c. dry white wine
2 tbsp. capers
Lemon wedges
1 lb. bluefish fillets
1 clove
1/4 tsp. thyme
Salt & pepper
4 med. tomatoes, chopped
2 tbsp. parsley
Heat oil. Cook garlic 2 minutes. Add spices, wine and tomatoes and simmer for five minutes. Pour sauce over fish in baking pan. Sprinkle with olive oil and capers. Cover pan with oiled foil. Bake 15 to 20 minutes until fish flakes. Garnish with lemon wedges and parsley. Recipe is fast and easy, light and healthy and inexpensive. Even people who don't like bluefish like this! 1/2 c. mayonnaise
1 1/2 c. sour cream
Salt & pepper
2 tbsp. chives, chopped
3 tbsp. lemon juice
Fillet bluefish. Compress fillet skinside down with one flattened hand on bread board. Slice off skin as thinly as possible. Make lengthwise V-shaped cut on outside of fillet, cutting away the brown flesh of the lateral sensor strip. Place fillets in buttered baking dish. Mix sour cream, mayonnaise, chives, lemon juice, salt and pepper and spread mix over the bloofie. Bake at 375 degrees for 30 minutes. 2 tbsp. olive oil or vegetable oil
2 cloves garlic, crushed
2 tbsp. chopped scallions
1 tbsp. soy sauce
1/3 c. catsup or chili sauce
2 tsp. orange juice
1/8 tsp. dried oregano
1/4 tsp. pepper
Preheat broiler. Place bluefish skin side down on well-greased broiler rack. Combine remaining ingredients and spoon mixture over fish. Broil so fish is 2 inches from heat about 8 minutes, or until fish flakes easily. Two bluefish about 2 pounds each, split and dressed, will serve 6-8.

Well in all my days of blue fishing on Long Island Sound this is my recipe:

Filet blue fish, rinse very well. Place filets on a pine board, salt and pepper to taste. Add chopped garlic and chopped onions (brown until clear), smother with chili sauce. Bake at 375 degrees until meat is flaky. Remove from oven, throw the fish away and eat the pine board! This is my personal favorite way of serving the blue fish, however, some of the family enjoy the fish more than the board. Enjoy.

I agree with Doug. My best recipe for blue fish is THROW THEM BACK. From what people have told me soaking them in milk does help. Also cut out the strip of dark meat before cooking. Grilling them also helps because a lot of the oil drains off while cooking.

A smoker. That sounds like an idea. Wonder what the neighbors would think?
Next time out, I am going to bring one home and try that.

Joe the barbecued blue fish came out very good thank you. only instead of the broiler I did them in my grill. I kind of thought you would have a few good recipes. Everyone who posted thank you I will get around to those recipes also. Dont think I will use a pine board maybe a hickory slab or butternut.
