I guess most people that cook them have there own way,but,this is how I do it.If you have 3 pounds of Steamers,you put them in a pot so that the Steamers fill the pot half way
.In the pot you put 1 1/2 in of water,some chopped onion,some chopped celery and a teaspoon on black pepper.bring water to quick boil and add Steamers.Cover pot and cook till all are open.7-10 mins .9This is for 3-5 pounds larger quantity will take a l longer)Drain broth and melt REAL butter.Use broth to dunk steamer in before putting in butter.
The way I clean them is,I wash them in cold water several times.Than I spread them in a deep baking pan sprinkle a little black pepper and corn meal on them cover with damp news paper and keep layering them in the pan.Refrigerate for at least 12 hours.Re-wash and cook them.The pepper helps them spit the sand and eat the corn meal. I have done it this way for many years and they are always excellent! Enjoy!
(If you do them by the bushel you can use the box the come in the layer and refrigerate)
