One of my favorite breakfast dishes.You can cheat a little and by the Hollandaise sauce in a package if you would like.Enjoy!



4 English muffins
butter
8 slices of Canadian style bacon or ham
8 poached eggs
Hollandaise Sauce
Split and toast English muffins. Spread with butter. Saute bacon or ham slices slightly in a small amount of butter. Place one slice of bacon or ham on each muffin half; top each with a poached egg. Cover with Hollandaise Sauce and serve.
EASY HOLLANDAISE SAUCE:
2 egg yolks
3 tbsp. lemon juice
1/2 c. butter
Dash of cayenne
Stir egg yolks and lemon juice in saucepan until blended. Add one half the butter. Stir briskly over low heat until butter is melted. Add remaining butter and cayenne; continue to stir briskly until butter is melted and sauce is thickened. Serve at once. Leftover sauce may be kept in refrigerator in a tightly covered jar. Makes about 2/3 cup.
