1 domestic fryer rabbit or 2 wild
1 medium sized onion
1 cup white wine
1/4 cup cooking oil
1 small can mushrooms drained
flour salt and pepper

dust cut up rabbit with flour salt and pepper,brown in oil on both sides add chopped onions and wine. Cover and simmer 30 min add mushrooms simmer 10 minutes serve with gravy made from pan drippings. I like it over rice.Thumbsup

That also would work vary well with pheasant (or chicken).Thumbsup

Yes someone please do teach me about wild mushrooms. I see them everywhere around the farm but I don't touch them except for puffballs because I don't know if they are the safe ones.

I'd be glad to take you to my secret mushroom places.....but you'll have to be blindfolded on the ride, after all they are secret places. In the spring we get the king of all mushrooms, the morel, In the summer we get golden chantelles, and then in july august we get the incredible black trumpets. Then in late fall we collect the "hen of the woods" and oyster mushrooms. These are all truly gourmet mushrooms that change the flavor of any dish from ok to WOW !!! Actually I have some black trumpets ( my favorite ) in my freezer, I'd be glad to share a small bag so you can see what I mean. These mushrooms sell at Whole Foods for $36-$50 / lb.....worth every penny, but finding them in the wild is like catching a 23 inch rainbow on the westfield with a fly you tied yourself on the first cast !....it's that good !

Black Trumpets might be a little strong for rabbit. I picked these yellows today (Kurt, I think you know where) that would go great with this dish.

From the very good picture I think I have seen those growing on land we own in Pelham near the reservoir. I still won't use them untill I am positive. Hey why don't we try that land there where a lot growing there. If they are the right ones there where more than in the picture.

Capt I was out there Saturday and got a few bagsful....I left because someone was shooting out there, and the shot was whizzing by....literally.... I was wearing my antlers....hey maybe thats why ?

Kurt: It is pheasant season and the area is stocked by the state so you really do need to be carefull. The season seems to be winding down and a lot of what I found was gone by.

Jackie: These are Trichaloma Flavovirens. They prefer sandy, mossy, piney areas. There are a few that look similar with the most comon being the King Bolet. The easy way to determin if it is a bolet is the underside being sponge like where as the Trich has gills ( I will post a picture bellow of a Trich showing the gills) Also the fatal "death cap" can look similar in its later stages. "Pop" the mushroom out of the ground with a knife. The death cap has a tell tale bulbulouse base. If you head out there and find what you think might be Trichs, post a picture and if they look right, I will meet you some where in between us (I'm in Greenfield) to check them for you.

If you are seriouse about getting in to shrooms I strongly suggest picking up a copy of the Audubon Field Guide as a good starting point.

That is so cool! I love mushrooms.My Grandma used to pick them ,but,never showed me how.She used to cook them with Venision ,Rabbit ,and a varity of forest and farm animals!.Those days are gone .I wish I could make some of that stuff now. I have a degree in culinary arts and I love to cook.I do the cooking in my home and worked at some big time restaruants back in the 70s and early 80s .I had a couple of my own bar kitchens .If you all need some info on food ,I can help.Thats why ,in the pics of me and the fish I catch, you see my big gut!! LOLWink1
