I was asked for a beer batter recipe by someone,so I figured I post it for you all.It's real simple and very tasty. You can make it ahead of time and take it camping and just mix in the beer when you are ready to cook! Thumbsup
Also good on Shrimp.Scallops,Chicken tenders(add some cajun seasoning)


1 c. buttermilk baking mix
1 c. beer (your favorite brand)
Garlic salt, salt and pepper, to taste
2 to 3 lbs. fillets (the catch of the day, cleaned and filleted)
Vegetable oil for frying( or Canola,or,Peanut)
Combine baking mix, beer, garlic salt, salt and pepper in a bowl. Dip cleaned fish fillets in batter. Fry in hot oil in a deep fryer or skillet until golden brown. Drain on absorbent towels. Serve hot. 4 servings.
Double for more servings.

I like to season the fish itself as opposed to the flour. It ensures that you get a good amount of flavor onto each filet, as opposed to strewn about in the flour.

I use 2 cups of flour for every 12oz of beer (something I've just found through experiment to work), and prefer Sam Adams' Summer Ale - the lemon flavor in the beer adds a lot to the fish. If you can't find it, Miller High Life. Seriously. It's light enough that you can still get the flavor but not so strong that you lose the pepper and fish. A little home made tartar and some thick cut oven fries and I am a waste of life for the rest of the day!
