Me neither until a recent game supper I attended. They soaked a bear roast in a corn brine solution like corned beef. Then cooked it like corn beef. It was so good I thought I was eating corned beef. And it came for a 410 lb. bear shot the previous year...so if it was that big you know it was hard to get it to taste that good. I plan on trying this technique of cooking the bear this year.
I usually make alot of Jerky with bear meat!

I was given a Bear roast a few years ago. I cooked it up like you would a pot roast and it came out just fine.

I agree with Seabass never had good bear meat. If I wanted Corn beef I would have ordered corn beer not bear meat. Never tried the jerky suppose it could be good.

I ate bear for the first time this year. My buddy got one in NB. He cooked it in the crockpot all day, then, covered it in BBQ sauce and reheated it on the grill. Literally taste like I was eating baby-back pork ribs. It was just fine IMO.
