What do you use for fish, also brine?
Jerky do you use a wet or dry marinade?
What do you use for wood? Elec. smoker or gas?
I tried smokin a salmon once. It was terrible. Maybe I lit the wrong end.

Jerky....dry spices, electric dryer! Works great!
Take your game meat, grind it into hamburg...add spices, wait a day while refrigerated and then start drying. This works great with bear meat with it being soo gamey...adds some flavor and is great to chew on during deer season!

I used to use a sweet dry cure rubbed on and then smoke for most of a day with hickory. I had an old realy old refrigerator that I converted to a smoker and built the fire in a pit then ran a small stove pipe to the hole under neath. Not very scientific but It worked very well. I especialy liked the rabbit done that way. Unfortunatley I no longer can have that amount of salt in my diet.

I smoke and make jerky, use an electric food dehydrator for the jerky, works great and is fast. I prefer just slicing the meat thin while partially frozen to the ground meat. I like the consistency of the end product better. Use a dry rub too.
Smoking, I go to the orchard and get the branches that fall from the apple trees or that they cut down. They usually will just give it to you. I have the best success with first drying the wood out sliced thin, then soaking it in water to get it to smoke better, not sure why, but thats how I do it.

Thanks every one for your replys. I have been making jerky and smoking fish for about 15 years. I was just wondering what other people did.

I thought you wanted to concentrate on fish. I cure my bacon and hams also salt pork I use mortons sugar cure and then hickory smoke. I have used apple wood but we like the hickory better.

i had some of yotes smoked fish when i fished with him and the smell and TASTE of the trout were GREAT

i would gladly have a taste test on the hard water derby this winter. bring your jerky and fish and i will declare the winner. the mods and jay will award the winner some money and gifts.
