Went to a pig roast a few weeks ago. Thought I might try to duplicate efforts - on a much smaller scale. Used a fresh pork shoulder. Injected it with a 1/2 & 1/2 mixture of melted butter and maple syrup. Coated it with salt & pepper. Then put it on the gas grill - turned the front burner on, left the back burner off, with the pork on the cold side. Placed several pieces of mesquite on the hot side and let her rip for 4 hours tried to keep the temp inside the grill around 300-350 deg. Injected a couple more times over the course of cooking and added wood chunks as necessary. Here's the result. Believe me it is was better than it looks!! Served with beverage of choice, corn on the cob (still on the stove), scalloped potatos, and sliced cherry tomatoes.
