My 2 sons convinced me to get out the deep fryer yesterday after we got some stripers in the morning. So I made up a batch of striper nuggets and clam fritters.
Thought I'd share the recipes.... they are simple.
Clam Fritters
Dry:
2 cups flour
2 tbls baking powder
1/2 tea baking soda
salt, cayenne pepper to taste
Mix dry and add....
2 beaten eggs
bunch of chopped clams and clam juice
also a bit of beer if needed to thin out batter

Striper Nuggets
Dry:
Bread crumbs
Corn Meal
a little Baking powder
Your favorite spices
mix dry in big bowl
Slice striper into 1/4" x 2-3" thick pieces
Rinse pieces
Throw them in the bowl with the dry stuff and coat well by shaking and mixing the pieces

I use Canola oil and heat it to 385 degrees for frying.
